A short-season variety introduced in 1909, Copenhagen Market Cabbage produces solid, round-headed cabbages of superior quality. With its tender white flesh and a short stem, this variety is absolutely superb for making sauerkraut. A reliable and classic heirloom choice for the home gardener.

  • Type: Heirloom Vegetable, Open Pollinated
  • Head Size: 2 kg, 15 cm diameter, round-headed
  • Features: Short season variety; superior quality; tender white flesh; ideal for sauerkraut.

Copenhagen Market Cabbage is a short-season variety that is best started indoors to ensure a timely harvest.

Planting: Sow seed indoors in a soilless mix 5 weeks before your last frost date. Sow seeds 6 mm deep and keep at 20°C for the 7-10 day germination period. Grow on at a slightly cooler temperature, then harden off and plant outside in late May.

Care: Space plants 45 cm apart in rows, with the rows 75 cm apart.

For a dependable, high-quality cabbage harvest, the Copenhagen Market is an excellent choice. Its short maturity time makes it a great option for gardeners with a shorter growing season. The solid, uniform heads, with tender white flesh, are perfect for a variety of culinary uses, from fresh salads to cooking. They are particularly well-suited for making superb sauerkraut. This long-standing heirloom proves that classic varieties remain favourites for a reason.
