Instead, its leaves are used to flavor Mediterranean stews, meats, and vegetable dishes, often added during cooking and removed before serving. Helichrysum italicum is a tender perennial, suitable for USDA Zones 7–10, and is propagated by rooting semi-hardwood cuttings in summer.
